The best pumpkin muffins

For those who have already tried them, I am sure you understand me when I say that I could eat these muffins every day. If you have never tried pumpkin muffins before then I would recommend that you give these recipe a try. Fluffy and super tasty I can guarantee these are the best pumpkin muffins you have ever tried!

Ingredients:

1 3/4 cups flour
10 g baking powder (or 2,5 tsp)
10g cinnamon (or 2,5 tsp)
1/4 tsp ground cloves
1/4 tsp nutmeg
1/2 tsp salt
1 1/4 sugar
280 g pumpkin puree (I prefer and usually use hokkaido pumpkin)
1/3 vegetable oil
2 eggs

Method:

  1. Use two mixing bowls to create two mixtures:
    a. Mixture one: Mix the flour, the baking powder, the salt, the cinnamon, the cloves and the nutmeg
    b: Mixture two: Mix the sugar with the pumpkin puree, the vegetable oil and the eggs
  2. Pour the pumpkin mixture into the flour and mix softly with a spatula until it is well combined.
  3. Pour the mixture in a muffin pan. It will give you exactly 12 muffins
  4. Bake in preheated oven at 200°C for 30 minutes.
